Crunchy Sesame Seed Coleslaw

If you’re like me you don’t have tons of time to spend in the kitchen but you still want to get the most bang out of your food. This one is sure to be a hit and something frequent in your rotation. I stumbled on this years ago while shopping at my local Whole Foods Market. They always have it on the fresh salad bar but it’s loaded with canola oil, which is an extremely unfriendly fat. I decided I would try and make it myself, but better and wanted to share it with you.

Ingredients:

1 head organic green cabbage (feel free to experiment with others)

1/2 cup raw almonds crushed, slivered or whole (sprouted preferred)

1/4 cup raw black sesame seeds, toasted (white is fine too)

Dressing:

4 tablespoons extra virgin olive oil

1 teaspoon (or more) apple cider vinegar

1 teaspoon (to taste) local honey

sea salt

pepper

 

Method:

Toast sesame seeds in pan on med-high heat for 5-10 minutes, turning often.

Chop coleslaw and mix with almonds. Add sesame seeds and gently toss.

Mix dressing and pour over mixture adjusting as needed.

Enjoy.
